My Favorite GF DF Recipe

I know it has been a long time.......enough said.  Let's just move on, shall we!

I have been asked a lot about cooking dairy free lately.  For most people it seems so difficult and when you add being gluten-free to the mix, it seems down right impossible.  I am here to tell you that it isn't all that hard.  Really!  It isn't that bad.  It is just a different way of thinking.

I wanted to share with you a great recipe today.  This is my all-time, go-to standard for so many recipes.

Hamburger Gravy

2 lbs of hamburger (I use venison)
2 onions chopped
8 Mushrooms sliced
1/2 cup GF flour  (I use Namaste's Perfect Flour Blend)
2 cups of milk (rice, soy, almond, coconut milk beverage)
2 cups of water
4 cubes of beef bouillon ( I use Herbox Beef Bouillon)
Salt and Pepper to taste
Seasonings (get creative here!)

Add bouillon cubes to 2 cups of hot water and let sit.  Set aside.

Brown hamburger and onion, drain fat thoroughly. Add mushrooms.  Mix the flour into the hamburger.  Add milk, water, bouillon cubes, and salt and pepper.  Season to taste.  Cook until heated through.

This is great over mashed potatoes or rice.   It is also a great base for casseroles.  Using the same basic recipe, switch the hamburger for chicken and use chicken bouillon cubes and you have a whole new flavor.  For a quick and easy casserole, add rice, cooked noodles, or frozen hash browns, along with a bag of frozen veggies.  Mix together and bake at 350 degrees for 45 minutes.  YUM!!!

I am glad to be back!  I am looking forward to sharing many more recipes with you!

Spicy Chicken and Pineapple

I love PF Chang's Spicy Chicken.  I am so glad they make a gluten-free version!  The only problem:  PF Chang's is a bit on the pricey side, so we only go a couple times a year, usually after I have accrued enough rewards points to get a free gift card.  So what to do in the mean time.   I decided to try making something like it a home.  There are some nice recipes online and I based my own recipe off of this one.  I changed a few things to make this version gluten free and for the most part paleo.  I have been reading a lot of nutrition books lately and wanted to try making it paleo too.  The problem with making this recipe completely paleo lies in the use of vinegar, which is controversial, and sugar, which is a no-no.  There are a lot of different takes on what constitutes a paleo diet and sometimes is is confusing!  Nonetheless, I wanted to try some new ingredients and play with the recipe a bit. The results were great!  Not quite PF Chang's, but yummy just the same.  I hope you enjoy.

Spicy Chicken and Pineapple

Chicken cut into bite sized pieces (I used 5 boneless skinless thighs.)
Coconut Oil (I used enough in the pan to fry the chicken)
1/3 cup of arrowroot powder

Dip the chicken into the arrowroot powder until the chicken is well dusted.  Fry the chicken in the coconut oil until done and light brown.  While the chicken is cooking, go ahead and make your sauce.

Sauce:

2 tsp coconut oil
4 cloves of garlic minced
3-4 green onions chopped
1 cup of pineapple juice (I drained a large can of pineapple chunks and reserved the pineapple for later.  If you are short on liquid, add a bit of water to make it one cup.)
2 Tbsp of chili sauce
2 Tbsp white distilled vinegar
4 tsp sugar
1 tsp Coconut Aminos or gf soy sauce
2 Tbsp water
1/2 Tbsp arrowroot powder

Heat the coconut oil in a medium sauce pan.  Add garlic and onion and saute until fragrant.  Add the pineapple juice and stir.  Add chili sauce, vinegar, sugar, and coconut aminos.  Stir.  Mix water and arrowroot powder together and add to sauce.  Bring to a boil, then simmer on medium high heat for approximately 5 minutes.

Toss the chicken, reserved pineapple, and sauce together.  Serve with cauliflower "rice" or regular rice.

What's for Dinner? It Better Be Quick!

We made it!  We are at the half way point of driver's education and I am still alive and kicking!  I even rode with Cinnamon while she drove and am happy to report that there were no casualties.  All kidding aside, they are both doing quite well actually.  I, on the other hand, am definitely feeling the impact of the additional days of driving into town.  The class is right smack in the middle of the day, so I rush around in the morning trying to get a few things done and by the time I get home I am already faced with the thought of, "what in the world am I making for dinner?"  On these days it better be quick and easy!

Tonight's dinner fit that request perfectly!  We had Baked Honey Mustard Chicken, a Rainbow Vegetable Salad, asparagus, and a wild rice medley.  Quick......check.  Easy.....check.   Delicious.....double check!  Perfect!

Baked Honey Mustard Chicken

Chicken (I used boneless, skinless thighs.  You could use a whole chicken cut up, but I was going for quick and easy.)
1/2 cup honey
1/4 cup Dijon mustard
3 Tablespoons of butter, melted (I used Earth Balance)
Salt and Pepper to taste

Preheat oven to 350 degrees.  Place chicken in the bottom of a 9 x 13 inch baking dish.  Salt and pepper the chicken.  Mix together honey, melted butter, and mustard.  Spoon over the chicken.  Place in the oven and bake for 1 hour.  Baste the chicken every 15 minutes while cooking.

The results are a deliciously moist chicken that combines the sweet with a bit of twang.  Yummy!

The Rainbow Vegetable Salad is  a combination of what I had lurking in my fridge waiting to be used up!    I used two mini cucumbers, several mini sweet peppers (red, yellow, and orange), grape tomatoes, and an avocado.

I chopped the avocado and tossed it with a bit of lemon juice.  I chopped the rest of the vegetables and placed them in a bowl adding the avocado.  I used a garlic sea salt and freshly ground pepper to taste and then drizzled the salad ingredients with a red wine vinegar and olive oil.  Simple, quick, and healthy.  The flavors really do pop in your mouth!

So there you have it.  Fast and furious.  I sometimes feel like all I do is run from one fire to the next, but I do take time to stop and enjoy life along the way.  Or at least pose for a dozen pictures Paprika tried to take of the two of us together while I was making dinner.  I liked the first one, but apparently Paprika was not satisfied with the first, or second, or third, or fourth.  Not really sure which number this one was, but I thought it was great, but then again, I liked all the others too.

Survival Mode and Baked Curried Chicken

Adding three or four days of driver's training a week has completely turned my world upside down.  I thought I was busy before, but now I constantly feel like I am in emergency survival mode trying to get to everything.   Let me give you an example.  I was trying to throw in a couple of loads of laundry today.  Paprika happened to walk by and ask what load I was doing, to which I replied, jeans.  She said, "Wait," only to run off and return with the jeans she had been wearing.  "I am so glad you are doing jeans.  I have been wearing these jeans for like three weeks since you haven't done that load!  I just keep waiting!"

Okay.  Now wait just a second!  First of all, I can promise you I have done the laundry and that "three" week estimate was off.........significantly off!  Second, did my precious, silently-waiting, TEENAGE daughter ever offer to do that load of three week old jeans herself?  My incredulous look must have said it all, as she quickly smiled, said thanks, and skedaddled.

So, it is obvious by my lack of laundry efficiency and lack of posting, that I truly have been busy.  Tonight I thought I would stop and take a quick breath and post the recipe of the Baked Curried Chicken we had tonight.  This is super easy and was delicious!

Baked Curried Chicken

Chicken (I used boneless, skinless, thighs, but any kind or amount would work)
5 cloves of garlic minced
Olive oil
Salt and Pepper to taste
Basil
Curry powder

Preheat oven to 425 degrees.  Place chicken in a baking dish and drizzle with olive oil.  Sprinkle chicken with salt and pepper.  Sprinkle chicken with a liberal amount of basil and Curry powder.  Top with minced garlic.  Bake 35 minutes.

Simple and delicious.  While the chicken was in the oven, I made a quick salad and steamed asparagus.  It was so easy, I would definitely make it again.

I am off for now.  The dryer just buzzed and I think Paprika has some jeans to fold!

The Perfect Autumn Day For Soup!

Today was your typical fall day.  The day started with very crisp air and a fine fog weaving its way through the pine trees.  The colors by mid-afternoon were vibrant against the monochromatic grey sky.  By evening the deer had gathered down the hill where I could see them from my kitchen window.  A mama and her fawn nosing through the yellowed grasses.  The smells of onions and garlic wafted through the air.  The perfect day for soup!

When I make soup, I make soup; lots of soup!  This is the perfect meal for batch cooking.   I usually make two different kinds at the same time.  Tonight I made a chicken vegetable rice in one pot and a vegetable beef in a second pot.  I figure since there are many ingredients that overlap, it is just easier to make two.  Clean up is easier too, especially since it is Allspice's night for dishes!

Tonight we had soup and biscuits.  The best part: after eating 10 bowls of soup, the rest is ladled into individual containers which I put in the freezer to use for lunches.
There are 17 lunches ready to place in the freezer!

I have a hard time spending $2.00 or more for a can of soup when I can make homemade soup for so much cheaper.  Tonight's vegetable beef cost $10.50 and made the equivalent of 15 cans of soup.  That's 70 cents a serving!  The chicken vegetable rice cost $7.19 and made 12 servings.  Each serving is only 60 cents.  Good for you and the budget!

I hope you enjoy these recipes.  I do want to apologize though.  I am one of those cooks who tends to not measure things or just throws things in at the last minute.  Sometimes, in trying to write the recipe, it may reflect that a bit.  I don't follow a recipe when I make soup either.  Most of the time I make it from what I have on hand.  So with that, if you have any questions, let me know and I will try and clear it up!

CHICKEN VEGETABLE RICE SOUP:

1 onion chopped
2 cloves of garlic minced
1 tbsp olive oil
4-5 celery stalks with leaves, chopped
2 medium carrots chopped
1/2 bag of frozen broccoli florets
1/2 bag of frozen peas
1 container (32 oz) chicken broth.  I use this kind.
1 can of chicken (12.5 oz) or 1 1/2 cups of cooked chicken
1 1/2 cups of Minute Rice
Water
Bay leaf
Seasonings (I use salt, garlic pepper, basil, oregano, and Italian seasonings to taste)

In a large pot saute onion and garlic in olive oil over medium heat.  Add celery and carrots.  Add broccoli and peas and continue to cook over medium heat until thawed.  Add chicken, broth, and rice.  Fill the rest of the pot with water.  Add bay leaf and seasonings to taste.  Bring to a boil.  Turn down heat to simmer for approximately 20 minutes.  If two much evaporates during this stage you can always add more broth or water. I added both.

My pot is not as big as I would like and so after we ate dinner I added more water and some seasonings to balance the ratio of liquid and solids in order to freeze it.

VEGETABLE BEEF SOUP:

1 onion chopped
2 cloves of garlic minced
1 1/2 to 2 lbs of hamburger
1 small can of mushrooms
1 bag of frozen mixed vegetables
1 can of tomato paste
1 can of kidney beans; drained and rinsed
1 can of black beans; drained and rinsed
2 cans of diced tomatoes with their juices
2 cans of tomato sauce
Water
Bay leaf
Seasonings to taste (I used salt and garlic pepper, basil, oregano, garlic salt)

Brown your hamburger along with the onions and minced garlic.  When the hamburger is cooked drain the meat.  Add frozen vegetables and mushrooms.  Stir in the tomato paste.  Add water to rinse the can.  Add kidney beans, black beans, and diced tomatoes.  Add tomato sauce.  I add water to rinse the cans.  Fill the remainder of the pot with water stirring to incorporate all ingredients.  Add your bay leaf and seasonings to taste.  Bring to a boil and then reduce to simmer for approximately 20 minutes.

New Menu Night: Chicken Pot Pie

Today was cold and rainy.  I am having a hard time getting used to the weather change.  A week ago it was in the 80's and today was barely in the 50's.  When the weather changes drastically like that, my poor body can't take it and it seems like I always end up with a cold.  Yuck!  So there I was today pouting about being cold and having one to boot!  Then I realized today is Thursday!  I could have very easily panicked, but I took one look at the menu and saw the perfect dish.

Every Thursday in our house is New Menu Night.  I figure in order to expand my gluten free world, I need to keep learning and growing.  Each Thursday I either try something completely new or convert an old recipe.  Tonight was Chicken Pot Pie.  Good old comfort food.  Now that is exactly what I needed.

I tried a few new things in this recipe.  First, to make it gluten free.  Second to use fresh ingredients.  And Third, to make it dairy free as well.

Chicken Pot Pie:

Chicken 4-5 boneless, skinless thighs
olive oil
3 carrots chopped
1 onion chopped
4 celery stalks chopped
1 cup of frozen peas
2 cloves of minced garlic
1/2 Cup of flour (I used Bob's Red Mill Gluten-Free All-Purpose Flour)
3 chicken bouillon cubes
2 cups of water
2 cups of soy milk
Seasonings (Salt, Garlic Pepper, Garlic & Basil)

The Topping:
1 1/2 Cups of GF Bisquick Mix
1 Cup soy milk
2 egg
4 Tbsp of melted butter

Preheat your oven to 350 degrees.

Cook chicken with a little olive oil in a large skillet.  Remove and add chopped carrots, onions, celery, and garlic.  Cook over medium heat until the onions are translucent.  Cut the chicken into small pieces and return it to the pan.  Add peas.

Mix flour in with chicken and vegetables to coat.  Add milk, water, bouillon cubes and seasonings.  Heat thoroughly.

Pour mixture into a casserole dish.  In a separate bowl.  Mix Bisquick mix, soy milk, eggs, and melted butter together.  Spoon on top of chicken mixture.

Bake at 350 degrees for 30-40 minutes or until topping is golden brown.  A toothpick inserted into the topping layer should come out clean.

The approximate cost for this dish is $7.50 and it easily feeds a family of five. We even had leftovers. You could use this as a quick stand-alone dish or pair it with this salad for an additional $2.40. Bringing your total to $9.80.
This is a simple salad made with romaine lettuce, grape tomatoes, mandarin oranges, and avocado slices.  I tossed it with a vinegar and oil dressing, a little salt and garlic pepper.  Yum!

A couple of things to note.  Not all bouillon cubes are gluten free.  The kind I use are the Herbox brand and can be found here.  Just read the label carefully.  Secondly, to make this completely dairy free you need to use a dairy free butter substitute.  We use Earth Balance.  If you haven't tried it, it tastes and cooks just like the real thing.  It is delicious.  I can't even tell the difference.  One other tip: if your Bisquick top is baked, but not browning, just place it under the broiler.  It browns very quickly and nicely.  Just watch it carefully so it does not burn!

So, how did this dish fare?  After a New Menu Night meal, we take a thumbs up or down vote.  The results were a resounding thumbs up!  I think my cold is already getting better!
